Our Story

The Inspiring Story of Palomino’s Mexican Restaurant

and its Evolution into Palomino’s Salsas and Tamales.

In 1995, Jose and Rebecca established Palomino’s Mexican Restaurant in Northeast Kansas City Missouri. Palominos quickly became a community restaurant and an anchor. Live Bands performed on Saturday evenings entertaining families who enjoyed the authentic flavors of Mexico. Rebecca and her daughter Veronica doing most of the cooking to maintain consistency in their recipes. In 2001 they expanded the restaurant into Fairmount Independence, Missouri and the Restaurants success continued. In Fairmount Independence, Palomino's played a vital role as a community anchor. The restaurant was deeply involved in local schools and community events. A popular annual highlight was the thrilling taco eating competition, where challengers were invited to devour 15 tacos in under 5 minutes. The winner was crowned champion and picture displayed on the Taco Champion Hall of Fame.

Award Winning Success

Palomino’s was invited to compete at the Royals Stadium for “The Viva Los Reales Salsa Showdown Competition” and spent time handcrafting their salsa recipes to take with them, including the Chunky Mango Salsa. In 2012, they brought home the trophy and continued to be successful, winning three more trophies in 2013, 2014, and 2015, each year taking a different salsa such as Smoky Rita Salsa, Salsa Verde, Spicy Salsa, and their Signature Chunky Mango Salsa.

Palomino’s earned a reputation for Award Winning Salsas.

Several customers were from families spanning generations who had been patronizing the venue since its debut in Northeast KC. While the restaurant was growing quickly, COVID-19 hit and many places shut down. Palomino’s operated through the majority of the pandemic, yet in 2022, Veronica’s father passed away, resulting in a substantial gap in the restaurant. Sustaining operations posed a challenge, prompting the closure of the establishment and Rebecca's retirement.

The Evolution into Palomino's Salsa & Tamales

Post closure, Veronica cherished extra moments with her daughters and husband, while continuing her love for cooking. The authentic flavors She needed to recreate the dishes at home were not available in grocery stores shelves or anywhere. So it was decided to bottle the recipes of the beloved restaurant, the foundation of the restaurants success and make it available to everyone.

In 2022, Veronica founded Palomino’s Salsa and Tamales, a woman and minority-owned food company, featuring salsa and tamales in tribute to her father.

Veronica started by selling at local farmers markets throughout the year, with dreams of selling products in local stores.

In 2023 Palominos milestone achievement obtaining FDA approval for salsas to be sold in grocery stores.
